Choose varieties that are quick to mature

Fruiting veggies like tomatoes, squash, and cucumbers are available in many different varieties. Some varieties can take close to 90 days to mature, while others mature and produce faster. The longer they take to mature the higher your risk is to losing some of your crop to fall frost. Look for varieties that mature in around 70 days.
